做法:春笋切成片后加少许盐(yán )捞出(chū )后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺(sháo )油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油(yóu )翻(fān )炒均(jun1 )匀,加入少量(liàng )清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
