做(zuò )法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
