做法(fǎ ):春笋切成片后加(jiā )少(shǎo )许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春(chūn )笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
