做法:春笋切(qiē )成片后加少许(xǔ )盐(yán )捞出(chū )后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
