做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
