做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋(sǔn )、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖(gài )大(dà )火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖(mèn )。
