做法(fǎ ):春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入(rù )2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快(kuài )熬干的时候加入(rù )盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
