做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱(cōng )段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀(yún ),加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开(kāi )后(hòu )转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
