做法:春(chūn )笋切成(chéng )片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入(rù )盐,翻炒(chǎo )均匀(yún )稍收汁(zhī )时盖上(shàng )锅盖焖。
