做法:春笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分(fèn )钟左右。再(zài )加入生抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入(rù )盐,翻(fān )炒均匀稍(shāo )收汁时盖(gài )上锅盖(gài )焖。
