做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切(qiē )成段。锅(guō )烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋(sǔn )、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量(liàng )清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
