做法:春笋切成片(piàn )后(hòu )加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱(cōng )切成(chéng )段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
